Is fried food bad for you?

Although no studies have yet proved the risks of fried foods, we all know of the bad side effects caused by:

  • excessive frying time
  • oil temperature over 180° (optimal temperature goes between 160° and 180°) 
  • bad quality of oil used 
  • frying various foods at the same time
  • failure to rest fried food on paper towels for the absorption of the excess
  • reuse of frying oil

In relation to the consumption of fried foods, numerous studies deny the existence of health risks.

According to a Spanish research published in the British Medical Journal, olive oil would be the most suitable for frying. In addition, olive oil provides a great help to the body in the prevention of cardiovascular diseases such as hypertension and hypercholesterolemia.

In particular, it would be the extra virgin olive oil the most indicated. Thanks to the content of phenolic antioxidants and the presence of monounsaturated fatty acids, extra virgin olive oil improves the fats nutritional quality. Furthermore, holding a greater oxidative stability power, it prevents from food oxidation at high temperatures, avoiding the development of toxic substances to the body. 

Potatoes, for example, absorb small quantities of oil: the large granules of starch rich in amylopectin, prevent the passage of oil inside the food preserving the nutritional virtues.

Cancer risk: How much is linked to the consumption of fried foods?

Other researchers have analyzed the relationship between the consumption of fried foods with the onset of cancers of the colon and rectum. Results show an index of zero risk. In addition, using extra virgin olive oil will prevent the production of harmful substances, thus the well-being of the body is assured. For this reason it is important not to pre-frying, freezing or refrying foods.

The cooking color is an important indicator of health: when particularly intense, it is synonymous of "acrylamide", a toxic substance to the body.
